Tonight’s improvised dinner:

Bow tie pasta, peas, and Alfredo” sauce…

  • Puréed steamed cauliflower
  • Caramelized onions
  • Nutritional yeast
  • Veganaise
  • Mustard
  • Salt

My favorite lazybones trick to caramelizing onions lately — blanch the onions, then stir in a small amount of either soy sauce or coconut aminos at the very end.
